Avocado Chicken Salad

A Caughlin Ranch FAVORITE! 

Avocado chicken salad 

Ingredients: 

  • 3-4 avocados
  • 1 red onion
  • Shredded chicken (2 chicken breasts or just use a rotisserie chicken)
  • 1 tablespoon Lemon juice
  • 1 tablespoon Olive oil
  • Salt/pepper
  • (extra additions for fun: Cilantro, chili powder, garlic powder, oregano)

Directions:

Start by cooking the chicken breasts and shredding them, or skip straight to the shredding if using a rotisserie chicken. In one bowl, combine avocados and chicken. You can use as many, or as little, avocados and chicken as you like. Next, chop the onion into cubes and add to the chicken/avocado mix. Then, add one part lemon juice and one part olive oil. Finally, add salt and pepper to taste. Mix and mash the concoction until you get the consistency you like. Eat by itself, in a tortilla, or on a slice of bread; whatever you choose! Catie, one of our Caughlin Ranch technicians, and her husband like to enjoy avocado chicken salad on crackers, topped with a dollop of sriracha.

This meal is full of nutrients and is super-duper simple. The avocados are nutrient-dense fruits that are considered a “good” fat, referred to as monounsaturated fats. These fats help lower bad cholesterol and can help prevent heart disease. Not to mention, they are a great source of vitamins K, C, E, B5 and B6 and contain folate and potassium as well. Chicken is considered a low-fat protein that assists in maintaining and building muscle mass. Lemon juice is a good source of vitamin C, aids in digestion, and has even been proven to prevent kidney stones. This meal is nutritious and delicious.
