Blondie Mini Muffins

These mini muffins are Sarah’s favorite thing to make for busy weeks. They’re a healthy snack to eat on the go, and they take little time to prepare. Enjoy this healthy treat!


1 can garbanzo beans rinsed or drained

½ cup almond butter

¼ cup maple syrup

2 tsp vanilla

½ tsp salt

¼ tsp baking powder

¼ tsp baking soda

Recipe Overview

1. Mix all ingredients in a food processor.

2. Set your oven temperature to 350.

3. Spray a mini muffin pan with cooking spray and bake for 20-25 minutes.

4. Makes 20-25 muffins 3-4 per serving.
