Carrot & Lentil Soup
We are big soup lovers here at Galena Sport, so Sarah Stalling wanted to share her yummy recipe with us. This carrot & lentil soup is flavorful and filling, with an easy recipe you can make in less than 30 minutes. Enjoy!
Ingredients:
1 tsp. olive oil
1 yellow onion, diced
3 cups carrots, diced
1 cup lentils, any color works
1-inch ginger, peeled and diced
1 tsp. cumin
½ tsp. coriander
⅛ tsp. cayenne
Pinch of salt
4 cups vegetable broth
Overview:
1. In a large pot over medium heat, add olive oil and onions. Saute for 3-5 minutes.
2. Add remaining ingredients. Bring to a boil, then reduce to a simmer and cover. Let cook for 20 minutes.
3. Carefully pour into a blender and blend on low until smooth.
