Crispy Prosciutto, Burrata & Peach Salad
This salad will definitely be your go-to dish this summer. The crispy prosciutto combined with the fresh burrata and peaches is the best thing I ever could have done for my tastebuds. Hope you enjoy this salad as much as I do!
4 cups arugula
6-8 slices of prosciutto
6 oz burrata
2 peaches, sliced
1 tbsp fresh basil, chopped
Salt & Pepper
1. Preheat the oven to 400 degrees.
2. On a greased baking sheet, arrange the prosciutto in a very loose ball/nest by folding the ends inwards. Spray with cooking oil and bake for about 10 minutes until crispy, checking frequently to prevent burning.
3. Toss the arugula in olive oil with salt & pepper.
4. Arrange your sliced peaches, burrata, and crispy prosciutto on top of the arugula. Sprinkle the fresh basil on top with a drizzle of oil, balsamic vinegar, salt & fresh cracked pepper.
5. Serves 4!
