Honey Roasted Bourbon Peanuts

Honey Roasted Bourbon Peanuts

I wanted a twist on traditional honey-roasted peanuts. I love them, they hit so many marks for a snack, Salty, Sweet, Peanut; what’s not to like? So here is my version with a little twist.

Ingredients:

1 cup blanched raw peanuts

½ cup sugar (I prefer brown sugar)

1 oz Bourbon

1 oz honey

1 tsp salt (I added an extra pinch because I wanted that initial salty kick)



Recipe Overview:

1. Roast the peanuts on low to medium heat for about 5-7 minutes. You will start to smell the peanut scent permeate, and they will start to lightly brown.

2. Turn the heat to low (so the sugar and honey do not caramelize), add the sugar, salt, and stir thoroughly.

3. Slowly add the bourbon and honey to not overwhelm the mixture (adding too quickly will cause caramelization and they will get too sticky). 

4. Continue to stir for the next 2-3 minutes until you get a nice crystallization over all of the peanuts. Let sit on a plate or baking sheet to cool. They will be ready to eat in about 10 minutes, and enjoy!

 

Where it can go wrong: overheating can turn it into more peanut brittle than individually coated peanuts. They still tasted great, just not the texture I was hoping for.

 

My wife and I like to cook these types of snacks during holidays and a few things we wanted to try with our next batch is a tbsp of cinnamon and powdered sugar. Have fun and we hope you enjoy it!
