Protein Pasta Salad
This pasta salad dish is a great light lunch or side dish option. Loaded with fresh veggies and herbs, this dish will have you coming back for seconds. This recipe only requires simple ingredients and is ready in under 20 minutes, enjoy!
1 box of Barilla rotini protein pasta
1/2 red onion chopped
1 whole cucumber sliced
Baby tomatoes sliced in half
2 cans of black olives
Feta cheese crumbled
3 tbsp olive oil
1 whole lemon juiced
3 tbsp red wine vinegar
Salt & Pepper to taste
1. In a large pot, boil your pasta until al dente, rinse under cold water and drain.
2. Add your pasta to a large salad bowl and combine it with all of your chopped veggies, olives, and crumbled feta cheese.
3. In a small bowl whisk together the lemon juice, olive oil, dill, red wine vinegar, and salt and pepper to taste.
4. Pour the dressing over the pasta. Toss and refrigerate until nice and chilled. Enjoy!
