Salmon Le Bowl
This simple and delicious bowl comes together in 15 minutes and it's the perfect weeknight dinner during a busy week. This is my go-to dinner when I need something quick and healthy. Enjoy this recipe!
½ cup arugula
⅓ cup brown rice
A small handful of cherry tomatoes
Sriracha Mayo Dressing
⅓ greek yogurt or mayo
1 tbsp sriracha
1 tbsp water
- Preheat oven to 400 degrees
- Coat salmon in olive oil, and top with salt, pepper, and lemon slices. Bake for 12 minutes.
- Whisk together all the ingredients for the sriracha mayo. Add water as needed for thickness (should be dressing consistency).
- Layer the bowl in order: arugula, brown rice, tomatoes, avocado, parmesan cheese, protein, then drizzle with sauce.
