Salmon Le Bowl

This simple and delicious bowl comes together in 15 minutes and it's the perfect weeknight dinner during a busy week. This is my go-to dinner when I need something quick and healthy. Enjoy this recipe!



½ cup arugula

⅓ cup brown rice

A small handful of cherry tomatoes

½ avocado 

Parmesan cheese

Sriracha Mayo Dressing

⅓ greek yogurt or mayo

1 tbsp sriracha

1 tbsp water

Recipe Overview

  1. Preheat oven to 400 degrees
  2. Coat salmon in olive oil, and top with salt, pepper, and lemon slices. Bake for 12 minutes. 
  3. Whisk together all the ingredients for the sriracha mayo. Add water as needed for thickness (should be dressing consistency). 
  4. Layer the bowl in order: arugula, brown rice, tomatoes, avocado, parmesan cheese, protein, then drizzle with sauce. 
  5. ENJOY :)
